When Kim was still living in Baltimore and working at Evergreen House a co-worker gave her a copy of the Official Cookbook of the 1982 World's Fair. This was the World's Fair that was held in Knoxville, Tennessee.

She showed it to me to illustrate what sort of recipes it contained. The claim of "600 International & Appalachian * Southern recipes" was striking. At the start of the Appalachian recipe section (titled, actually, "Appalachian Mountain and Country Favorites") I found an interesting preface:
